Ingredients:  Start with 2 of your favorite red apples diced 1/4 inch, organic if possible

Juice of 1/2 lemon

2 ribs celery, diced about 1/4 inch

1/2 cup coarsely chopped walnuts

1/3 cup golden raisins

1/4 cup favorite mayonnaise

1/4 cup sour cream or yogurt

Salt and black pepper to taste (freshly ground if prefer)

Preparation: Toss apples with the lemon juice in a bow. Add celery, walnuts and raisins, then toss. Combine the mayo and yogurt or sour cream in another bowl, then fold into the apple mixture. Season to taste with salt and pepper. Pack in tightly covered, small containers. 4 servings. Congratulations you have just made a refreshing and nutritious dinner or salad with dinner. *I usually make it as the main dish as dinner.
